Baba Ganoush – Oriental Eggplant Dip Recipe

Baba Ghanoush – the oriental eggplant dip – instantly brings a holiday feeling to the table with its smoky, nutty aroma. Baba Ghanoush is perfect as a dip for fresh bread, vegetables, or as a side dish for grilling.

Ingredients

1 Serving

  • 1 small eggplant
  • 1 clove garlic
  • 1–2 tbsp tahini (sesame paste)
  • 1–2 tbsp lemon juice
  • 1–2 tbsp olive oil
  • Salt, pepper
  • Optional: cumin, paprika powder, fresh parsley, pomegranate seeds

Grate fresh ingredients on a damp grater.

To grate fruits and vegetables such as strawberries and apples, or ginger and garlic, moisten the grater beforehand with a drop of water, oil, lemon juice or similar. It slides better and can be easily removed with a brush.

Preparation

  1. For the Baba Ghanoush, pour a little olive oil onto the grater surface of your dip bowland grate a clove of garlic directly into it. Let it sit while the eggplant cooks in the oven.
  2. Prick the eggplant several times with a fork and bake at 200°C (top/bottom heat) for about 30–40 minutes until soft and wrinkled. Then let it cool briefly, halve it, and scoop out the soft flesh with a spoon.
  3. Place the eggplant flesh in the dip bowl and mix with tahini, lemon juice, and the garlic oil. Season with salt, pepper, and optionally a little cumin or paprika powder.
  4. Mash everything coarsely to finely with a fork or a small masher – depending on the desired consistency.
  5. Garnish the eggplant dip with fresh parsley and a few pomegranate seeds and serve directly in your dip bowl – a real eye-catcher on any table.

Tip: If you like it particularly smoky, you can also roast the eggplant for the Baba Ghanoush on the grill or directly over a gas flame.
