Ginger Cookies with Fresh Ginger

Gingerbread Cookies with Fresh Ginger: Spicy, aromatic, and wonderfully crispy: These ginger cookies get their special aroma from fresh ginger grated on a ceramic grater – which gives them a slight spiciness and subtle citrus notes. Perfect with tea, as a spicy alternative to classic Christmas cookies, or simply as a snack.

Ingredients

approx. 40 cookies

  • 250 g flour
  • 100 g sugar (brown or white, depending on taste)
  • 1 packet vanilla sugar
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 egg
  • 150 g cold butter, diced
  • 2 tbsp honey or maple syrup
  • 3–4 cm piece fresh ginger
  • Optional: ½ tsp cinnamon or ¼ tsp nutmeg for a spicier note

Grate fresh ingredients on a damp grater.

To grate fruits and vegetables such as strawberries and apples, or ginger and garlic, moisten the grater beforehand with a drop of water, oil, lemon juice or similar. It slides better and can be easily removed with a brush.

Preparation

  1. For the ginger biscuits, mix flour, sugar, vanilla sugar, baking powder, and salt in a bowl.
  2. Moisten your plate grater and grate the ginger into a fine pulp.
  3. Add pieces of butter, egg, honey, and the freshly grated ginger. Quickly knead everything into a smooth dough.
  4. Form the ginger biscuit dough into a roll, wrap it in cling film, and let it rest in the refrigerator for about 1 hour.
  5. Preheat the oven to 180 °C top/bottom heat.
  6. Roll out the dough in portions (about 3-4 mm thick) and cut out ginger biscuits. Alternatively, cut slices from the roll.
  7. Place the ginger biscuits on a baking tray lined with baking paper and bake for 10-12 minutes until golden brown.
  8. Remove and let cool on a wire rack.
  9. If desired, dust the ginger biscuits with icing sugar or dip them in dark chocolate.
