Potato Salad with Apple-Mustard Dressing

Creamy, fresh, and beautifully balanced: This potato salad combines lukewarm potatoes with a light crème fraîche and Dijon mixture, finely grated onion, apple, and lemon – all mixed directly in the grating bowl. Perfect after an hour of steeping and ready to serve.

Ingredients

6-8 servings

  • 1 kg potatoes, cooked & diced (ideally waxy potatoes)
  • 1 large onion
  • 1 apple, peeled
  • 2 cloves garlic
  • 1 tub crème fraîche (200–250 g)
  • 2 tbsp Dijon mustard
  • Juice of ½ lemon
  • Salt & pepper
  • Herbs for garnish (parsley/chives)
  • Optional for finishing: 2–4 tbsp hot potato cooking water or 1–2 tbsp olive oil for extra juiciness.

Observe the order - from smallest to largest!

If you want to grate several ingredients in a dish, make it easy for yourself and grate from smallest to largest.

Preparation

  1. Boil the potatoes (preferably unpeeled) in salted water until soft, drain, let them steam dry briefly, peel them, and cut them into lukewarm cubes.
  2. Lightly moisten your grating bowl. Grate the garlic, onion, and apple finely, one after the other, into the grating bowl. Quarter the lemon, remove the seeds, and grate the juice and pulp into the bowl. Add crème fraîche and Dijon mustard, and stir until smooth. Season generously with salt and pepper.Tip: Now stir in 2–4 tablespoons of hot potato cooking water – this makes the dressing lighter and helps it combine better.
  3. Add the lukewarm potato cubes to the dressing mixture in the grating bowl and carefully fold them in with our silicone spatulauntil everything is evenly coated.
  4. Cover and chill for at least 1 hour. Taste before serving and garnish with fresh herbs.

Tip:For more crunch: Mix in finely diced gherkins or celery, if desired.
