Pasta with tomato sauce made from fresh tomatoes, a little garlic, and olive oil, emulsified into a creamy consistency with pasta water. Simple, quick, and really good – just make it yourself. Perfect for everyday, topped with basil and on the table in a good 20 minutes.

Ingredients

2 servings

  • 250 g pasta (e.g. spaghetti or penne)
  • 4 ripe, fresh tomatoes
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp sugar
  • Salt and pepper
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese (optional)

Observe the order - from smallest to largest!

If you want to grate several ingredients in a dish, make it easy for yourself and grate from smallest to largest.

Preparation

  1. For the pasta (e.g. spaghetti or penne), bring a large pot of heavily salted water to a boil. Cook the pasta al dente according to package directions. Reserve 150 ml of pasta water, then drain.
  2. For the tomato sauce, moisten your graterwith water and finely grate the garlic.
  3. Wash the tomatoes, remove the core, and grate the tomatoes directly on your grater.
  4. Heat olive oil in a large pan over medium heat. Sauté the garlic for 20–30 seconds (do not brown). Add the grated tomatoes, bring to a boil, then simmer gently for 10–15 minutes until slightly thickened. Add sugar, salt & pepper to taste.
  5. Add the pasta to the sauce in the pan. Stir in pasta water little by little and toss for 1–2 minutes until the tomato sauce adheres nicely to the pasta. Tear the basil and mix in.
  6. Serve the pasta with tomato sauce on plates, sprinkle with Parmesan (optional) and top with fresh pepper.
