Original Mac & Cheese Recipe - Easy & Ultra-Creamy

Ultra-creamy, cheesy and stringy, and ready in under 15 minutes: This Mac & Cheese recipe turns out particularly silky thanks to a béchamel base and cheese freshly grated with the EasyGrater. Perfect as pure comfort food – or with a crispy oven crust for that little extra Mac & Cheese touch.

Ingredients

  • 300 g macaroni (or other short pasta)
  • 200 g cheddar
  • 50 g Parmesan
  • 2 tbsp butter
  • 2 tbsp flour
  • 400 ml milk
  • 1 tsp mustard
  • salt and pepper
  • 1 tsp paprika powder

Preparation

  1. Cook macaroni:Bring a large pot of salted water to a boil and cook the macaroni al dente
    (according to package directions). Drain and reserve some of the cooking water (about 100 ml).
  2. Grate cheese:Grate the cheddar or cheese of your choice roughly with theEasyGrater.
  3. Prepare cheese sauce:In a saucepan, melt the butter over medium heat. Add the flour and whisk until a smooth paste forms (a roux). Gradually add the milk, stirring constantly to avoid lumps. Bring the mixture to a brief boil until it thickens slightly. Stir in the grated cheddar and Parmesan until the cheese is completely melted. Add mustard and paprika and season with salt and pepper to taste.
  4. Combine pasta and sauce:Add the cooked macaroni to the cheese sauce and mix well until the pasta is evenly coated. If the sauce is too thick, add some of the reserved cooking water until the desired consistency is reached.
  5. Serve:Serve the Mac & Cheese hot, garnished with a little grated Parmesan and paprika, if desired.
