Spaghetti Napoli & Pecorino

Classic, herb-fresh, and wonderfully simple: We bring spaghetti together with a fruity Napoli sauce, lots of fresh herb aroma, and finely grated Pecorino. On the table in under 20 minutes – perfect for when things need to be quick but still taste like an Italian summer.

Ingredients

2 servings

  • 250 g spaghetti
  • 4 ripe tomatoes
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp sugar
  • Salt and pepper
  • Fresh basil leaves for garnish
  • 80 g Pecorino cheese

Preparation

  1. Cook pasta in generously salted water until al dente; reserve 150 ml of pasta water, then drain.
  2. Moisten your plate graterand finely grate the garlic --> sauté in a large pan for 20-30 seconds, do not brown!
  3. Wash and destem fleshy tomatoes, then grate them into your grating bowl. Add to the pan.
  4. Simmer gently for 10–15 minutes; season with sugar (optional), salt & pepper.
  5. Add pasta to the sauce, emulsify with pasta water for 1–2 minutes until creamy, and fold in basil.
  6. Serve and grate Pecorino over with yourEasyGrater(fine blade), and fresh black pepper.
