Asparagus-Strawberry Salad with Burrata – ready in minutes, straight to the table. Fresh asparagus, ripe strawberries, juicy tomatoes: a combination that's simply in season. Prepare everything in a mixing bowl, serve immediately – and the spring highlight is complete.

Ingredients

  • 5 tbsp olive oil
  • 4 tbsp balsamic vinegar
  • 1/2 lemon
  • 1 tsp honey
  • Salt & pepper
  • 125 g strawberries
  • green asparagus
  • 10 cherry tomatoes
  • basil
  • 1 pc burrata
  • Ciabatta or white bread
  • olive oil

Grate fresh ingredients on a damp grater.

To grate fruits and vegetables such as strawberries and apples, or ginger and garlic, moisten the grater beforehand with a drop of water, oil, lemon juice or similar. It slides better and can be easily removed with a brush.

Preparation

Strawberry Dressing:

  • Finely grate a few strawberries (up to just before the stem) in your grating bowl.
  • Mix with lemon juice, olive oil, salt, and pepperto form a fruity dressing.

For the Salad:

  • Wash the remaining strawberries, tomatoes, and asparagus.
  • Then halve the strawberries and tomatoes.
  • If necessary, remove the woody ends from the asparagus and then cut it into 3-4 long pieces. Fry in olive oil and salt.
  • Marinate the chopped vegetables and cooled asparagus with the strawberry vinaigrette directly in your grating bowl.
  • Place a whole burrata on top.
  • Drizzle with olive oil and balsamic glaze.
  • Scatter basil over the salad.
  • Grate lemon zest and some Parmesan over it as well.
  • Serve with fresh ciabatta or white bread.
