Fresh lamb's lettuce with sweet honey-mustard dressing and Appenzeller cheese

Crispy, nutty and ready in minutes: Warm roasted sunflower seeds meet delicate, fresh lamb's lettuce and ripe tomatoes, all coated in a sweet and sour honey-mustard dressing. Finish by shaving fine slices of Appenzeller cheese over the top with the EasyGrater – and voilà, your uncomplicated and easy bistro salad for every day is ready.

Ingredients

  • 100 g fresh lamb's lettuce
  • 150 g cherry tomatoes, halved
  • 2–3 tbsp sunflower seeds
  • 40–60 g Appenzeller cheese
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1 tsp mustard
  • 1–2 tsp white wine vinegar or lemon juice
  • Salt & pepper
  • Optional: ½ red onion (finely sliced), cucumber, croutons

Preparation

  1. Roast sunflower seeds in a pan without fat for 2-3 minutes, then let cool.
  2. For the simple honey-mustard dressing, whisk oil, honey, mustard, vinegar/lemon, salt & pepper into a smooth dressing.
  3. Lightly mix fresh lamb's lettuce & tomatoes with the honey-mustard dressing.
  4. Sprinkle with the warm seeds.
  5. Grate Appenzeller cheese directly over the lamb's lettuce with the EasyGrater (slicing blade)and serve immediately.

Tip: Stir 1-2 tablespoons of finely grated Appenzeller into the honey-mustard dressing – this gives the salad body, bite, and even more flavor.
