Teriyaki Sauce – homemade, unbelievably good

This recipe for teriyaki marinade delivers exactly what makes good food: depth, a light sweetness, umami – and that moment when you pause after the first bite. The secret? Fresh garlic and ginger grated directly – not chopped. This makes everything more intense, more aromatic, simply… rounder. What is Teriyaki Sauce?

Teriyaki sauce is a Japanese marinade made from soy sauce, mirin, sake, and sugar – rounder and slightly sweeter than pure soy sauce, which is significantly saltier and more one-dimensional. It's not spicy, rather deep umami with gentle sweetness. If you like spice, just add chili. Hoisin or yakitori sauce are similar in use – both also sweet-and-savory and ideal for glazing.

Usage & Marinating Time

The sauce goes well with chicken, salmon, beef – and vegan with tofu, eggplant, or broccoli. For good flavor, 30 minutes of marinating time is enough; overnight is even better. For fish, a maximum of 24 hours, otherwise the acid will alter the texture too much.

Vegan, Gluten-Free, Healthy & Pregnancy

Teriyaki sauce is generally vegan – as long as the soy sauce does not contain animal additives. Classically, it is not gluten-free because soy sauce contains wheat; tamari is the easy alternative. When homemade during pregnancy and without raw fish, it is absolutely harmless. Calories: approx. 80–150 kcal per serving, depending on the amount of sugar – in moderation, a completely normal part of a balanced diet.


Ingredients

  • 1 clove garlic
  • 2 cm ginger
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar or honey
  • 1 tsp sesame oil
  • 1 tbsp water
  • Salmon fillets
  • Optional: 1 tsp cornstarch

Grate fresh ingredients on a damp grater.

To grate fruits and vegetables such as strawberries and apples, or ginger and garlic, moisten the grater beforehand with a drop of water, oil, lemon juice or similar. It slides better and can be easily removed with a brush.

Preparation

  1. For the teriyaki sauce, grate garlic and ginger directly into your Magic Mix Bowl.
  2. Add soy sauce, rice vinegar, and sugar.
  3. Stir in sesame oil and water.
  4. Optionally, stir in cornstarch if you want the sauce to thicken slightly later.
  5. Rub the salmon with the teriyaki sauce and let it marinate briefly.
  6. Cook until golden brown in a pan, oven, or air fryer. 🔥
