Our Tomato Butter Recipe: Sunny and aromatic, wonderfully creamy: this tomato butter combines tomato paste, finely chopped dried tomatoes, fresh herbs and – if desired – a hint of garlic grated on a ceramic grater. Mixed directly in the dip bowl, the tomato butter is instantly ready for bread, grilled vegetables, steak/BBQ or as a finishing touch for pasta – Mediterranean aroma in every spoonful.

Ingredients

  • 125 g butter, room temperature
  • 3 tbsp tomato paste
  • 5 sun-dried tomatoes in oil
  • 1 small clove of garlic
  • 10 g fresh herbs (basil/oregano)
  • ½ tsp salt, pepper
  • Optional: 1 tsp lemon juice or a little zest, 1 tsp olive oil (makes it more spreadable), ¼ tsp chili flakes, pinch of honey/sugar to round off the flavor

Grate fresh ingredients on a damp grater.

To grate fruits and vegetables such as strawberries and apples, or ginger and garlic, moisten the grater beforehand with a drop of water, oil, lemon juice or similar. It slides better and can be easily removed with a brush.

Preparation

  1. For the tomato butter, slightly moisten your dip bowl, and finely grate the garlic directly into it. Finely chop the sun-dried tomatoes and herbs.
  2. In the dip bowl, cream together the butter, tomato paste, chopped tomatoes, herbs, (optional) lemon juice/olive oil, and salt & pepper with the silicone spatula.
  3. Taste; if necessary, balance the tomato butter with chili and a pinch of honey/sugar.
  4. Smooth the surface of the tomato butter and chill for 30–60 minutes.
