Ginger Recipes –
Ob wärmender Tee, spritzige Limo oder herzhaftes Curry: Diese Ingwer Rezepte haben eines gemeinsam: Frisch geriebener Ingwer. Beim Reiben werden die Fasern aufgebrochen und Saft sowie Aroma voll freigesetzt – deutlich intensiver als beim Schneiden. Damit das gelingt, kommt es auf die richtige Ingwerreibe an. Unsere handgemachten Keramikreiben von Evergrate reiben besonders fein, sind kinderleicht zu reinigen und eignen sich neben Ingwer für über 30 weitere Zutaten. So wird aus einer kleinen Wurzel im Handumdrehen die Basis für deine liebsten Ingwer Rezepte.
Apple Ginger Spritzer
For 2 glasses
You will need:
- 2–3 cm ginger
- 300 ml cloudy apple juice
- 300 ml sparkling water
- a few apple slices
- ice cubes
Instructions:
Finely grate the ginger and mix it with the apple juice. Divide into two glasses with ice, top up with sparkling water and serve with apple slices.
Ginger-Lime-Mint Lemonade
Yields approx. 1 liter
You will need:
- 3 cm ginger
- 2 limes
- 2–3 sprigs of mint
- 750 ml sparkling water
- 2 tbsp honey or agave syrup
- Ice cubes
Instructions:
Finely grate the ginger and mix with the juice of one lime and the honey or agave syrup. Add mint, ice cubes, and a few lime slices. Fill with sparkling water and stir briefly.
Ginger-Lemon Shot
For 2 shots
You will need:
- 3–4 cm ginger
- Juice of 1 lemon
- 100 ml apple juice
- optional 1 tsp honey
Here's how:
Finely grate the ginger and mix with lemon juice and apple juice. Sweeten with a little honey to taste and divide into two small glasses.
Ginger Tea
For 1 large cup
You will need:
- 2–3 cm ginger
- 300 ml hot water
- 1 slice of lemon
- optional: a little honey
Instructions:
Finely grate the ginger, put it in a cup, and pour hot water over it. Let it steep for 5–8 minutes. Garnish with a slice of lemon and, if desired, a little honey.
Ginger Iced Tea
Yields approx. 1 liter
You will need:
- 3–4 cm ginger
- 3 black or green tea bags
- 1 organic lemon
- 1 liter water
- a little honey or agave nectar
- Ice cubes
Instructions:
Steep the tea in hot water according to package directions. Grate the ginger finely and add it to the still warm tea. Season with lemon juice and a little sweetener, let cool, and serve with ice.
Ginger Honey
For 1 small jar
You will need:
- 4 cm ginger
- 150 g liquid honey
- optional: a little lemon zest
Instructions:
Finely grate the ginger and mix thoroughly with the honey. Add a little lemon zest to taste. The ginger honey tastes great in tea, on bread, in yogurt, or in salad dressing.
Ginger Honey Cookies
For approx. 20 cookies
You will need:
- 100 g soft butter
- 80 g honey
- 1 egg
- 200 g flour
- 1 tsp baking powder
- 3 cm ginger
- 1 pinch of salt
Instructions:
Finely grate the ginger. Mix butter, honey, and egg. Add flour, baking powder, salt, and ginger and combine to form a dough. Place small mounds of dough on a baking sheet lined with parchment paper and bake at 180 °C (top/bottom heat) for about 10-12 minutes.
Mango-Ginger Spread
For 1 small jar
You will need:
- ½ ripe mango
- 100 g cream cheese or vegan cream spread
- 2 cm ginger
- 1 tsp lime juice
- Salt and pepper
Instructions:
Finely dice or mash the mango. Finely grate the ginger and mix with cream cheese and lime juice. Fold in the mango and season with salt and pepper.
Carrot Ginger Dip
For 1 bowl
You will need:
- 2 medium carrots
- 2 cm ginger
- 150 g cream cheese or a plant-based alternative
- 1 tsp lemon juice
- Salt and pepper
- optional a pinch of cumin
Instructions:
Cook carrots until soft and let them cool. Grate the ginger finely. Puree all ingredients until creamy or mash thoroughly with a fork. Season with salt, pepper, and a pinch of cumin if desired.
Ginger-Sesame Dressing
For 1 large salad bowl
You will need:
- 2 cm ginger
- 3 tbsp oil
- 2 tbsp soy sauce
- 1 tbsp rice vinegar or lime juice
- 1 tsp honey or maple syrup
- 1 tsp sesame seeds
Instructions:
Finely grate the ginger. Mix thoroughly with oil, soy sauce, rice vinegar, and honey. Add sesame seeds and pour the dressing over salad, cucumbers, or a bowl.
Carrot Ginger Noodles
Serves 2
You will need:
- 200g noodles
- 2 carrots
- 3 cm ginger
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 spring onion
- optional: some sesame seeds
Instructions:
Cook noodles according to package directions. Cut carrots into fine strips and grate ginger finely. Sauté both briefly in a pan. Add noodles, soy sauce, and sesame oil and mix well. Serve with spring onions and sesame seeds.
Coconut Ginger Curry
Serves 2
You will need:
- 3 cm ginger
- 1 small onion
- 300 g vegetables of your choice
- 400 ml coconut milk
- 1–2 tsp curry powder or curry paste
- a little oil
- salt
- a little lime juice
Instructions:
Finely grate the ginger. Chop the onion and vegetables and sauté in a little oil. Briefly roast the ginger and curry with them. Pour in the coconut milk and simmer for about 15 minutes. Season with salt and lime juice.
Pumpkin Ginger Soup
Serves 4
You will need:
- 600 g pumpkin
- 3 cm ginger
- 1 onion
- 700 ml vegetable broth
- 100 ml coconut milk or cream
- Salt and pepper
- a little oil
Instructions:
Dice the onion and pumpkin and sauté in a little oil. Grate the ginger finely and fry briefly with the vegetables. Pour in the vegetable broth and cook everything until tender for 15-20 minutes. Purée the soup, stir in the coconut milk or cream, and season with salt and pepper.
Ginger Teriyaki Marinade
For approx. 400 g vegetables, tofu, fish or meat
You will need:
- 3 cm ginger
- 4 tbsp soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp rice vinegar or lime juice
- 1 tsp sesame oil
Instructions:
Finely grate the ginger and mix with all other ingredients. Add vegetables, tofu, fish or meat to the marinade and let marinate for at least 30 minutes.
